Mini Egg Frittatas

21 Day Fix approved recipe for Mini Egg Frittatas. Think omelets made in muffin tins that you can freeze to easily eat for breakfast on the go.

What I do is just mix up a bowl full of eggs and/or egg whites, and add whatever meats/veggies you have on hand. My favorites include adding some chopped up ham or bacon, mushrooms, green onions, black olives, tomatoes and yellow bell peppers. I also add a little bit of cheese.

Tip: Mix up eggs in one bowl until yolks are blended then Mix all your ingredients in a separate bowl.

Fill the bottoms of each muffin spot with your mixed ingredients then fill about a1/4 cup of egg on top. The egg will fill in all the spots and you won't end up with all the good stuff floating on top and then your last egg cups with nothing in them.

Bake until egg is cooked through.

Freeze and then reheat in microwave for 1-1/2 minutes and eat.

To make four muffin tins worth (I like to do it once and be good for a couple of months), I used about 3 dozen eggs plus some liquid egg whites and had a medium sized bowl of my ingredients that was almost overflowing.

For 21 Day Fix, on muffin if probably 80-100 calories, depending on what you put in it as your ingredients. If you included one meat, and other veggies and cheese, you'd be looking at 1 red, 1/2 green, 1/4 blue containers.
